Of all the styles of cheese currently made in the world all but two are from the “old-world”. Colby and Brick are the exceptions and both were created in Wisconsin.
Colby is a Midwestern staple. It is very mild and supple, melts well and doesn’t over power any flavors in your cooking. Named for the Wisconsin town where it was invented over 100 years ago Colby is the cheese to have on hand when there are kids around.
