Smoked Ba Ba Blue

This is my "desert island" cheese. It is so unbelievable it is the one you can't live without. The ewe's milk is mild yet tangy and the light hardwood smoking brings out a slight crunch and a subtle saltiness. Great over a spinach salad with a fruit vinaigrette. Great by itself along with that red wine you have been saving.
Share some with that person who has always been afraid of blue cheese - it will have them begging for more - we've seen it happen 100's of times.
