In the lush valleys of Wisconsin’s driftless area we found this whimsically delicious take on the Old-World classic. It’s really three cheeses in one. Layers of delicate, yet rustic, ewe’s milk and goat’s milk cheese are separated by a dusting of grape wine ash. They’re pressed together so you can enjoy either layer separately or try them together for a third flavor profile.
