Blues
Blue cheese is one of those wonderful accidents. Hundreds of years ago a wheel of cheese forgotten in a cave was impregnated with mold which started to grow into the cheese. Thanks to adventurous soul who decided to eat it rather than destroy it - blue cheese was born.
Wisconsin offers a huge variety of blues. Cow, goat and ewe's milk varieties - even smoked. From mild to kickin', there is a blue cheese from Wisconsin that you will taste taht makes you think back to the caves of Europe and the hungry farmer who made it all possible.
