Sheep’s milk has been used to make blue cheese for hundreds of years. The darker cream makes a beautiful base accented by the blue veins. To finish it off, this blue is lightly cold-smoked over hard wood. The smoke enhances the sweetness of the milk and adds a bit of crystallization for a slight crunch.
